The wine displays rich berry fruit flavours and balanced oak characters. Following fermentation, and prolonged skin contact, the wine was racked to a combination of new and aged French and Hungarian oak barriques for maturation that averaged 12 months. The resultant wine is elegant and complex with mint, berry and cedary notes. Picarus Cabernet Sauvignon will continue to improve with further bottle ageing under correct conditions.

Barossa Old Vines Shiraz
The wine exudes characters of spice, pepper and juicy plums. Following fermentation, the components were racked separately and matured in a combination of mainly french, but also american and hungarian hogsheads with restraint. This has added excellent complexity to the final blend. The wine is full flavoured, rich and will accompany a wide variety of fine foods. Picarus shiraz will continue to improve in the bottle when cellared correctly.
